This is not a wine of excess. It is restraint, patience, and intention. Slow spontaneous fermentation—no rush, no shortcuts. Aged in old Burgundy barrels & 1962 concrete vats—letting the structure find itself. Unfiltered, unfined — because sometimes, the raw truth is the most powerful.

Origin: Dão DOC, Santar
Production: 1,152 bottles
Farming: Organic (non-certified), hand-picked, 80-year-old vines.
Aging: 70% in Burgundy French oak, 30% in original 1962 concrete vats.
Style: As untamed as the first tango, as timeless as a fado song.
